King Arthur Classic 100% Whole Wheat Buns

2 1/2 teaspoons instant yeast OR 1 packet active dry yeast1 1/3 cup lukewarm water1/4 cup canola oil1/4 cup molasses (can use honey or maple syrup instead)3 1/2 cups King Arthur Whole Wheat Flour1/4 cup nonfat dried milk1 1/4 teaspoon salt2 tablespoons Vital Wheat Gluten
Bread machine: Place all liquid ingredients in the bottom of the pan. Add all dry ingredients. Place on DOUGH ONLY cycle. Once dough cycle is complete, let come to first rise. Knock down and cut dough into 16 even pieces of dough and gently roll in hands into a ball shape. Place on baking sheet and let come to a second rise in a prewarmed oven with pan of water for 30-40 minutes. Remove from oven, preheat oven to 350 and bake rolls for approximately 20 minutes - until lightly browned.
Makes 16 buns. Serving size is 1 bun.
NOTE: You could also form dough into a loaf if desired. Cooking time will be longer - 40 minutes. After baking 20 minutes cover with foil tent so overbrowning doesnt occur. Instant read thermometer at center of loaf should read 190 degrees when done.
