Ingredients
2 baked or boiled potatoes1 Tbsp finely chopped onion1 stalk celery, finely chopped1 small bunch of roquette, chopped (can substitute parsley, basil or other fresh herbs)dash of garlic powder, salt, pepper1tsp olive oil1 Tbsp cider vinegar
Directions
Boil potatoes and cool. Peel
Cut into bite sizes
add all ingredients and mix
Serve cold
