Guiltless Taco Salad

12 oz. extra lean ground beef1/4 c. water10 tsp. Taco Seasoning (like Old El Paso)6 cups iceberg lettuce1 cup diced tomato10-12 small black olives, diced3/4 cup Kraft Free Shredded Cheese1/2 cup Salsa6 tbsp. Nonfat Sour Cream
Brown the ground beef in a non-stick skillet until thoroughly cooked. Add the taco seasoning and water. Turn heat down and let it simmer for 5 minutes (or longer, until all of the liquid has been absorbed).
Meanwhile, in a large bowl, combine the lettuce, tomato, olives, and cheese. Toss to mix. Once the ground beef is finished simmering, add it to the lettuce mixture. Toss well to combine. Divide salad evenly into two bowls. To the top of each bowl, add the following: 1/4 cup salsa and 2 Tbsp. Sour Cream. Sprinkle the top of the sour cream with chives for garnish (optional).
