Tropical Whole Wheat Oat Bran Bread

3 cups *Whole Wheat Flour1 1/2 cup Oat Bran3/4 tsp. Salt1 1/2 tsp Baking Soda3/4 tsp. Baking Powder3 tbsp Cinnamon, ground1 1/2 tsp Vanilla Extract1 1/2 cup, packed Brown Sugar12 oz. Pineapple crushed in juice6 Large Eggs - Eggland's Best4 small (6" to 6-7/8" long) Banana fresh8 Tbls. Coconut - Baker's Flaked sweetened (2 Tbls), 3 serving 8 Tbls. 2/3 cup White Chocolate Chips - Nestle Toll House (1 Tbls...12 tb..., 6 serving 3/4 stick Butter, salted
Preheat oven to 350 degrees & grease (3) 8" x 3 3/4" x 2 1/2" loaf pans.
In a bowl, combine flour, oat bran, salt, baking powder, baking soda, and cinnamon. Set aside.
In a mixer bowl, combine brown sugar, pineapple & vanilla then beat on low speed until blended and mostly dissolved. Add in eggs & mix until combined. Add bananas & mix until combined. While the mixer is running, add in flour mixture slowly, until all is just combined. Stir in coconut & white chips.
Pour into loaf pans & bake for about 40 min. or until toothpick inserted in the middle comes out clean.
Each loaf should yield 12 slices...I figured the nutritional info on 12 slices per loaf for a total of 36 servings. Let cool for 20 minutes before slicing. You can also cool completely & seal in a freezer bag & freeze...or cut into slices then place it in the bag to freeze...this is nice if you want to grab a piece for breakfast & heat in the microwave or take out the night before to thaw for the morning.
