1 tsp olive oil1 diced onion1 minced clove of garlic2 diced carrots1/2 cup diced celery1/2 bunch of broccoli1/2 head of cabbage8 cups of low sodium vegetable broth2 cups of water2 bay leaves1 bunch of fresh herbspepper corn to tastehot sauce if you wish
In the olive oil, cook the onion till transluscant. All all the minced, diced veggies. Cook for another 10 minutes. Add the broth, water and bay leaves. Add the pepper to taste.
Cook for about 20 minutes. Add the fresh herbs. Cook for another 5 minutes and voilą !!!
Serve with a dash of hot sauce if you wish.
