Scotch pancakes

Ingredients
120g self raising flourpinch of salt30g caster sugar1 egg1/4 pint milk
Directions
Sift the flour into a large bowl and mix in the salt and sugar. Measure the milk into a jug and beat the egg into the milk. Beat the eggy milk into the flour mixture until smooth.

Heat a griddle or frying pan over a moderate flame. If your pan is a good non-stick one it will not need greasing. Put tbsp of mixture on the pan and cook until set and bubbles on the surface start popping, flip over and cook on the other side.

Serve anyway you like.
