American Omelet

Ingredients
1 whole egg2 egg whites1 oz ham1/4 cup artichoke hearts, quartered1/2 cooked cubed potato1/4 cup fresh mushrooms, sliced1 clove garlic, minced1 oz cheddar
Directions
Spray small frypan with cooking spray and heat over med-high heat. Add mushrooms and cook until they start releasing liquid. Add garlic and cook 1 min longer. Place mushrooms, potato, ham and artichoke hearts in round pan in GT Express. Scramble eggs and egg whites together. Pour over vegetables and ham, season as desired and sprinkle with cheddar. Close cooker and cook for 10 minutes or until eggs are set. Makes one serving.
