Tarragon Chicken and Apples

1/4 cup Apple Juice3/4 teaspoon fresh tarragon or 1.4 teaspoon dried tarragon, crushed1/2 teaspoon instant chicken bouillon granules1 clove garlic, mincedDash ground black pepper4 small skinless, bonelss chicken breast halves (12 oz. total)1 medium apple, cored and sliced1/4 cup sliced green onions1 Tbsp cold water1 1/2 teaspoons cornstarch
1. In a large skillet combine the apple juice, tarragon, bouillon granules, garlic and pepper. Bring to boiling; reduce heat.
2. Turn chicken over; add apple slices and green onion. Cover and simmer 4 to 5 minutes more or until chicken is tender and no longer pink.
3. With a slotted spoon, remove chicken and apple to a servi9ng platter; keep war. Reserve cooking liquid in skillet.
4. In a small bowl, stir together the cold water and cornstarch. Stir into cooking liquid in skillet. Cook and stir for 2 minutes more. Spoon over chicken and apples.
Makes 4 servings.
