1 cup whole wheat flour, 1/4 cup of rolled oats, 1 tablespoon evaporated cane juice sugar, 2 teaspoons baking powder, 1/4 teaspoon salt, 1 cup rice milk, 2 tablespoons safflower oil, 1 tsp of almond or vanilla extract, 1 tablespoon of earth balance
Beat all dry ingredients together, then add all wet ingredients and mix well. Pour small "silver dollar" amounts of batter on heated griddle oiled with earth balance. Flip them once you can see bubbles form. Top with fruit, butter or maple syrup.
