Thai Turkey Lettuce Wraps

3 Carrots, finely diced1 cup Water20 oz. Ground Turkey (I use breast meat)5 cloves Garlic, finely chopped1 Tbsp ginger root, finely chopped2 cups Shiitake Mushrooms, chopped (about 8...they shrink)2-8oz. cans of Water Chestnuts, chopped1/2 cup Teriyaki Sauce3 Tbsp Hoisin Sauce3 Tbsp creamy Peanut Butter1 Tbsp Sesame Oil1 bundle Green Onions, sliced thinIceberg Lettuce - outer leaves
Boil the carrots in the water in a non-stick pan on high heat for 3-5 minutes, watching all the time, until all the water is absorbed. Remove and set aside.
Heat sesame oil in a non-stick fry pan. Saute garlic and ginger, then add ground turkey. Brown the turkey on medium heat til no longer pink -- about 5 minutes.
Add all remaining ingredients except the green onion. Cook on med-high heat for 4 minutes. Add the green onion and cook one minute more.
Serve with iceberg lettuce leaves and brown rice. Garnish with chopped cilantro.
Makes wonderful leftovers the next day too!
