Poached Chicken in Ginger Miso with Bok Choy

1 free range chicken breast1 1/4 c. vegetable stock or make stock with veggie cube1 tbs. organic miso1/2-3/4" pice of fresh ginger2 cloves garlic, peeled and chopped3 tbs. fresh cilantro1/2 red pepper, finely sliced1 handful bean sprouts2 bok choy trimmed and roughly chopped, save 2 leaves for garnish
1. Preheat oven to 390 F. Take a large sheet of foil and place the chicken in the center.
2. In a small pan, bring the stock to a boil and add the miso, ginger, garlic, and 1 tbs. of the cilantro.
3. Pull the foil up to create a bowl shape and spoon over the flavored stock. Scrunch the foil up to create a parcel. Transfer to a baking tray and cook for 10 min.
4. Arrange the bok choy on a serving plate. Transfer the cooked chicken onto the bok choy and then sprinkle over the pepper and sprouts.
5. Garnish with the two whole leaves of bok choy and remaining cilantro. Serve immediately.
