*Quick and Easy Pork Tenderloin

Ingredients
1 1/2 lb pork tenderloin2 cups white rice10 oz. package mixed vegetables - frozen4 cups hot water1 pkg Lipton Soup Mix
Directions
Place rise in a 8x13 inch lightly grease casserole dish.
Add soup mix, rice and frozen vegetables.
Add hot water and stir thoroughly.
Place pork tenderloin on top of rice and vegetables.
Bake at 375 degrees for 45 minutes or until all the water is absorbed.

To make this with brown rice, you need to bake the rice for 20 minutes before adding the vegetables and tenderloin or the pork with dry out before the rice absorbs the water.

Serves 6 large portions, or 8 small.
