Apple Streusel Cinnamon Swirl Muffins

Ingredients
Topping:1/4 c. sugar2 tsp cinnamonMuffins:1c grated peeled apple (1 large)2 tbsp cinnamon sugar mix (above)1 1/4c whole wheat flour3/4 c. sugar3/4 tsp baking soda1/4 tsp salt2 eggs1 cup applesauce (recipe calls for oil but I did a straight substitution)1 tsp vanilla1 tbsp melted butterIn a small bowl, mix together the grated apple and the 2 tbsp cinnamon sugar; set aside. In a large bowl, stire the flour, sugar, baking soda, and salt together. Add eggs, applesauce (or oil), and vanilla. Stir until blended.Stir in the apple mixture. Spoon about 2 tbsp (1/8 c.) batter into muffin tin. sprinkle 1/2 tsp cinnamon sugar over the batter. Spoon the remaining batter over the sugar mixture using just shy of 2 tablespoons batter on each. use a pastry brush to dap the top of the batter with the melted butter. Sprinkle remaining cinnamon sugar over the top of the muffins.Bake just until the top feels firm and a toothpick comes out clean, about 25 minutes. Cool for 10 minutes in the pan on a wire rack. Remove from pan and cool completely on wire rack.

    Delicious Muffins, but no baking temp is listed. I baked them at 375 for about 20 minutes and they were done. - 9/30/12

    I added about 2 tsp cinnamon to the batter and 1/2 tsp nutmeg. Baked at 400 degrees F. Didn't have enough batter to do 4 tbsp per muffin. Taste really yummy! - 4/15/10
