Eggplant Parmesan

1 lg eggplant, sliced 1/2 cup egg beaters1 cup Italian seasoned breadcrumbs1/8 cup olive oil1 cup Ragu Light Tomato Basil Sauce3 oz part skim shredded mozzarella cheese
Slice eggplant, either in round slices, or from end to end. Dip slices in the egg beaters; coat well with bread crumbs. Heat olive oil in large skillet. Brown eggplant slices. Spread about 2 tbsp of sauce in bottom of a 9x12 baking dish. Transfer eggplant into baking dish. Top each slice with remaining sauce, and a portion of the cheese. Bake in a preheated 350 degree oven for 30 minutes.
