Pasta Salad

Ingredients
8oz Bowtie Pasta1 cup Cherry or Grape Tomatoes (halved)1/4 cup Sun Dried Tomatoes1 1/4 cup Fresh Spinach leaves1oz Walnuts (14 halves) coursly chopped2Tbsp Fresh Chives chopped1Tbsp Extra Virgen Olive Oil (EVOO)1Tbsp Balsamic or White WIne Vinegar1 Tsp Salt1 Tsp Pepper * optional: Pine nuts instead of walnuts. Blue cheese, feta cheese, monterey jack cheese *
Directions
Cook the pasta as directed. For the last 2 minutes of the cooking time add the spinach leaves. Drain the pasta and spinach. Add the tomatoes, walnuts and chives to the past and toss. Combine the EVOO, vinegar, salt and pepper. Add to the pasta and toss.
