3 Cups grated or shredded zucchini1 Cup Bisquick1/2 cup fresh shredded or grated Parmesan cheese2 tbsp. chopped fresh parsley1/4 - 1/2 tsp oregano or Italian blend1/2 tsp salt1/2 ground black pepper4 eggs lightly beaten
Preheat oven to 350. Line a 9x13" pan with foil (or use pyrex that is coated with cooking spray). Combine all ingrediants in large bowl and mix vigorously with wooden spoon until combined. Spread in prepared pan and bake approximately 25 minutes until golden brown.
Let cool for 10 minutes. Cut into 32 squares. Transfer from pan to serving platter. Serve warm or at room tempature.
