Diabetic Fruit Cake

3 cups dried, mixed fruit - rinse with water in a colander1 cup walnuts1 cup dates - chopped1 cup water1 cup red wine2 cups self raising flour1/4 cup milk2 tblespns vegetable oil1 tblespn bi- carbonate of soda1 tspn mixed spice
1. Pre-heat oven to 180 deg C. Grease a 20cm square cake tin.
2. In a saucepan mix fruit, walnuts, dates, water and red wine and bring to the boil. Boil for 3 mins. Cool for 10 mins.
3. Mix flour, oil, milk, bi-carb and mixed spice in a mixing bowl. Added cooled fruit mix.
4. Pour into tin, bake for 50-55 mins.
Makes 30 2x7cm slices.
