Yummy Eggplant

3 cups Eggplant, unpeeled, 1/4 in. slices2 T. Extra Light Olive Oil2 T. Balsamic Vinegar1 T. Garlic Powder1 T. Onion Powder1 t. Oregano1 t. Thyme
1. Mix olive oil, vinegar, garlic powder, onion powder, oregano and thyme in bowl.
2. Toss in eggplant and let maninate for 15 to 20 minutes, tossing every 7 minutes.
3. Preheat over to 375.
4. Place marinated eggplant in a single layer on an aluminuim lined baking sheet.
5. Cook for 20 minutes or until eggplant is tender.
