Poppy Seed Chicken

4 boneless, skinless chicken breasts, cut in small cubes1/4 tsp garlic powder1/8 c Parmesan Cheese2 tbs canola oil1 lb bag frozen broccoli3/4 c mayonnaise1/8 c heavy cream1 packet Splenda1 tsp poppy seedsS&P8 oz. shredded Colby-Jack Cheese
Preheat Oven 350
Dredge Chicken in garlic and parmesan and stir-fry with oil in frying pan until cooked through.
While that's happening, place frozen broccoli in a 2 quart casserole with lid and microwave on high for 7 minutes. Drain any excess liquid. While the chicken & broccoli are cooking, mix the mayo, heavy cream, Splenda, and poppy seeds in a small bowl using a wire whisk. Layer ingredients: Broccoli on bottom, cooked chicken, sauce. Salt and Pepper each layer to taste. Top with shredded cheese & cover casserole. Bake for 30 min.
