Chicken Potpie

Filling2 cups cooked chicken, cubed2 carrots, chopped1 stalk celery, large, sliced1 potato with skin, cubed1 med onion, diced1 can Cream of Chicken soup, low sod & low fat1 cup chicken broth1/4 cup fat free greek yogurt1/4 tsp each sea salt & pepperTopping3/4 cups each of whole wheat and white flour1 1/2 tsp baking powder1/2 tsp sea salt1 tsp dried thyme1 1/2 tbsp shortening1 cup 2% milk1 tsp lemon juice
Mix all filling ingredients together in 2qt baking dish.
Mix lemon juice with milk (or just use buttermilk if you have it). Whisk dry topping ingredients together then cut in the shortning until crumbly. Add milk mixture, stir until just combined. Drop dough on top of filling in 6 even portions.
Bake in 400 degree oven approximately 30-40 minutes. Let cool 10 mins before serving.
