Crispy Smashed Potatoes

Ingredients
1 medium potatoA few sprays of cooking spraysalt and pepper
Directions
Poke a few fork holes into a cleaned potato and place in microwave until well cooked. About 10 minutes.

Preheat oven to 500 F.

Spray a cookie sheet with the non stick cooking spray. Take the cooked potato place it on the greased pan and mash it down to about a 1 inch thickness with a desert plate. The more cracks the potato has on the edges the more crispy the potato will become.

Spray the potato with the cooking spray and sprinkle with salt and pepper.

Place in the hot oven for about 30 minutes or until potato becomes crispy on the edges.

To change up the flavor you can also sprinkle with seasoning salt or fennel or any other herb that you favor.
