Chicken & Penne from the kitchen of Maxine Cook

Ingredients
1 cup Olive Oil1/2 Cup Balsamic Vinegar6 tbsp Grey Poupon Country Style Mustard3 tbsp minced garlic8 tbsp splenda or sugar6 tbsp waterpinch of cayenne pepper4 boneless, skinless, chicken breasts1lb Whole Wheat Penne PastaShredded Paremesan to taste (this is not included in total calories)
Directions
Combine the olive oil, balsamic vinegar, mustard, garlic, splenda, cayenne pepper, and water. Pour into a gallon zip lock bag and add 4 chicken breasts. Marinate for at least 2hrs. (I throw it together in the morning and leave it in the fridge all day.) Grill chicken and boil pasta. Once the chicken is done slice into small bite size pieces. While the chicken is cooking put the marinade into a sause pan and bring it to a boil. Drain the pasta and mix it with the chicken and heated marinade. Sprinkle with parmesan cheese as desired. Makes 7 1 1/4 cup servings
