Curried Quinoa with Mango Sauce

Ingredients
1 cup Bob's Red Mill Organic Quinoa1/2 yellow onion1/2 cup peas (fresh or frozen)2 tsp canola oil1 tbsp curry powder1/2 cup raisin1/2 cup president choice curried mango sauce or any spicy chutney will do.2 cups low sodium chicken broth
Directions
Makes 6 1/4 cup servings - quinoa expands

Boil 2 cups of chicken broth add 1 cup of Quinoa - cook for 12 minutes - set aside for 15 minutes -lid on.

In large wok add oil, onions, peas, raisins and some of the curry powder - add in quinoa - stir as if it is a stir fry - add more curry powder - i put down 1 tbsp but really it is to taste.
In Canada we have President Choice products - I added 1/2 cup of Memories of Bengal Curried Mango Sauce but you can add any type of Spicy Chutney - keep stirring until all mixed together.
Enjoy - you can add cooked chicken breast small pieces if you like to make this into an entire meal.
