Dan's Seriously Delicious Low-Carb No Bake Cookies

1/3 cup sugar2 2/3 cups Splenda3/4 cup margarine/butter1/2 cup milk4 tablespoons cocoa3 1/3 cups oatmeal2/3 cup peanut butter1 teaspoon vanilla
Bring sugar, Splenda, margarine, milk and cocoa to a boil and let it boil for 1 MINUTE. Stir in peanut butter until it melts, then vanilla, then finish by stirring the oatmeal into it. Drop by teaspoonful on wax paper. Let cool for at least an hour. You don't have to put them in the fridge to cool. Just leave them covered on your counter and they solidify just fine.
With this recipe I make about 32 cookies. According to my calculations each cookie only has 5-7 net carbs (depending on what oatmeal, milk, etc. you use). I found that a little bit of real sugar (which is part of the recipe) helps the cookies form better and solidify, but doesn't add many carbs at all with that small amount (it's about 1 1/2 - 2 carbs of the total for each cookie).
If you're on low-carb, these things are seriously good.
