THE Corn Dip

Ingredients
2 cans DelMonte Fiesta Corn (do not substitute)1 cup mayo1 cup sour cream3 green onions, chopped1 1/2 cup shredded cheddar cheese1/2 cup shredded parmesan cheeseseasonings optionalServe with fritos!
Directions
In a large bowl, add sour cream, mayo, cheese, and onions. Drain corn very well or dip will be soupy. Pour corn in bowl and mix well. I add a little pepper and salt, and some paprika. Chill in the fridge for at least 4 hours. Serve with fritos.

You can make this recipe low or no fat by substituting low fat sour cream, mayo and cheese.

    Delicious! I'm assuming a serving size is just one scoop? I actually used cheddar jack cheese just because I had it on hand, and added paprika, pimentos, and green chilies just for more flavor. - 4/13/10
