Indonesian Peanut Chicken

1 large, whole chicken breat, cut into bite-sized piecessalt & pepper1 tbsp. canola or vegetable oil1 med. yellow onion, finely diced1/4 cup peanut butter (preferrably organic)1/3 cup chili sauce1 cup water1 med. red bell pepper choppedhandful of peanuts2 cups of rice- cooked
Makes 4-6 servings
-Sprinkle Chicken with salt and pepper, heat oil over med-high heat in a large pan
-Saute chicken until lightly browned on all sides and just opaquue throughout
-Place chicken on a plate, saute onion until softened in chicken drippings
-Once onion is soft add peanut butter and chili sauce to pan, reduce heat to medium
-gradually stir in water until peanut butter is melted and sauce is fully blended
-add chicken back to pan until mixture heats through
-Serve chicken and sauce mixture over rice, topped with bell pepper and peanuts
