Mild Black Eyed Pea Curry

250g dried black eye peas (beans) soaked over night400g chopped tomatoes1 small onion chopped4 cloves crushed garlic1 tsp mild curry powder1 tsp ground cumin seeds1 tsp ground corianderlarge bunch fresh coriander, finely chopped OR 6 tbsp of dried coriander1 small can of coconut cream
Cook the pre soaked peas/beans for around 30 minutes until tender
Cook the onion in 1 tsp of olive oil for around 5 minutes, until soft
Add the chopped tomatoes, garlic, curry, ground coriander and cumin seeds and cook over a low heat for 10 minutes
Add the peas/beans, fresh or dried coriander and coconut cream to the tomato mixture and cook for 15 minutes over a very low heat
Serve with plain basmati rice or a plain naan
