Quiche Lorraine Scones

2 cups + 1 tbsp plain white flour, separated1 tbsp baking powder1 tsp cayenne pepper1/4 tsp salt1/2 cup unsalted butter, softened but NOT melted1/2 cup half and half3 eggs4 oz Swiss cheese1 cup thinly chopped green onions5-6 oz uncooked bacon
Preheat oven to 400F/200C. Grease a baking pan and set aside.
Dice or shred the cheese; chop the scallions; cook and crumble the bacon. Combine in a small bowl, thinly coat with 1 tbsp flour, and set aside.
Mix the remaining flour, baking powder, cayenne pepper, and salt in a large bowl. Cut in the softened butter until pea-sized.
In a small bowl, lightly beat together two of the eggs and the half-and half. Add to the flour mixture. Add the bacon, cheese, onion mix and fold with a wooden spoon until mixed. In a very small bowl, beat the remaining egg with 1 tsp of water and set aside as a wash for the scones.
Turn dough out onto a VERY well-floured surface and knead for about a minute. Pat the dough to a thickness of 3/4 to 1 inch, then cut the dough into nine even squares. Place squares on the greased baking sheet and brush each scone with the egg/water wash. Then place in the oven and bake until golden brown, approximately 15-20 minutes.
Nutrition is figured for nine good-sized scones. Could certainly make smaller scones for less calories.
