Baked Breakfast Cake - Apple Pie Style

Ingredients

1/2 cup chopped pecans (or almonds, walnuts, etc)1 cup old fashioned oats3/4 cup unsweetened applesauce2 tsp vanilla extract1 tbsp agave nectar2 tsp cinnamon1.5 tbsp chia seeds (optional)1 1/4 cup skim milk (could use almond, rice, soy, etc)1 small apple, peeled and chopped
Put all ingredients (except apple) into a blender and blend until smooth. Place in 3 small oven safe dishes (greased). Top with apple chunks and a sprinkle of oats. Bake at 350-375 for 30 minutes.
Can be refrigerated for 4 days or frozen!! Remember to let dish come to room temp before baking.
PLEASE NOTE... before you judge this as bad by the fat amount... it is 1.7 g sat fat... the rest is 6 g of Polyunsaturated Fat and 9.7 g Monounsaturated Fat which are both HEALTHY fats!!! :) (it's from the chia seeds and nuts!)
