Coconut Almond Granola

Ingredients
4 c. old fashioned rolled oats1/3 c almonds, sliced1/4 c. unsweetened coconut (shredded)3 T. honey 2 T. brown sugar2 T. canola oil2 t. almond extract
Directions
Preheat oven to 300. Combine oats, almonds and coconut in large bowl. Over low heat, heat honey until it thins. Then add oil and brown sugar, remove from heat and add almond extract. Pour over oat mixture and stir to coat well. Spread on large cookie sheet lined with parchment paper. Bake 15 minutes, stir. bake another 5 minutes then stir again. Bake about 5 minutes more until golden in color.

Makes 15 servings. Serving size is 28 grams, 1 ounce or about 1/4 c.

(This granola does not come out chunky like some granolas. It is perfect for sprinkling on top of yogurt.)
