3-4 very ripe bananas, mashed1egg1/2cup ground/milled flax seed2tbs melted butter3/4 cup soy flour3/4 cup whole wheat flour (or omit soy flour and use 1 1/2 cups wheat flour)1tsp baking soda1tsp salt1tbs vanilla1tsp cinnamon1tsp nutmeg1/2cup sugarmix all ingredients in large bowlI like to add 1tsp almond extract sprinkle on top w/1/2 cup sliced almonds on top. add other nuts per preference.
combine all ingredients except almonds, mix together with fork, pour into bread pan. sprinkle almonds on top. cook on bottom rack 340degrees F approx 45-55mins. enjoy high-fiber, low fat banana bread with heart healthy fats from omega fatty acids. high fiber from flax seed, whole wheat flour, and soy flour.
