potato cheese pierogi

Ingredients
Dough: 10 cu white flour10 large eggs8 oz sour cream, liteFilling:10 med. potatoes11 oz goat cheese8 oz farmers cheese
Directions
1.- peel, boil, and mash potatoes with all cheeses.
2. combine flour with eggs and sour cream and 2 T of oil.
3. roll out 1/3 of dough, to 1/8" thick. Cut 4-5" circles, using a glass or bisquit cutter.
4. Put 1/2 T of potatoe mix in dough circle and press closed around edges.
5. boil pierogies approximately 5 min. At this point pierogis can be frozen.
to serve: saute with onions until light brown, and serve with sour cream.
