Flax Oatmeal Protein Bars

3 cups large oat flakes1/2 cup freshly ground flaxseeds3 packets of stevia or splenda1/2 cup egg whites, beaten2 cups applesauce, unsweetened5 scoops protein powder (any flavor) - (strawberry works well)1/2 cup fresh berries (blueberries work well)1/4 cup crushed or whole almonds OR natural peanut butter OR almond butter (i use natural peanut butter)1 tsp baking powderflavor - vanilla, cinnamon, nutmeg all spice (i use cinnamon)
1. preheat oven to 325. mix all dry ingredients in a bowl and blend well.
2. in a separate bowl, combine egg whites, applesauce and stevia. stir well until blended.
3. stir liquid mixture into dry ingredients and mix well. the consistency will be thick and similar to cookie dough.
4. spread batter onto a baking sheet coated with non-stick spray. use a 9x12 baking dish if you prefer thicker bars. bake until edges are crisp and browned (about 15-20 mins depending on bar thickness)
5. cut into 12 bars and refrigerate in air tight container
do not over cook bars.
