Erika's Turkey Meatloaf

Shadybrook Farm Lean Ground Turkey ( i used 93/7) 112 grams4C Plain Breadcrumbs - .5 cup2T grated parm cheese1T garlic salt1 large egg1/4 Cup milk, 1%1T Fresh chopped shallots1T Fresh mince garlic1T Fresh chopped Rosemary
Total this makes about 4 servings.
-First, you want to chop up the shallots, garlic, and rosemary (each separately). i prefer to use jarred minced garlic, because i hate how sticky the garlic gets.
-In a bowl, combine the meat and all the ingredients together... HOWEVER you should reserve 1.5 T of the breadcrumbs and 1T of the parm cheese to sprinkle on top later.
-Once everything is well combined (it shouldn't be too slimy from the egg... if it is, add more breadcrumbs to soak it up, little by little but remember it will alter the nutritional info), place meat into the pan you want to cook it in. i use a 13x9 pan, and form it to the shape i want. (no it doesn't fill the pan!) but im sure you could use a small bread pan and it would work just as well.
- once you have formed your meatloaf, sprinkle remaining breadcrumbs on the top/sides and then do the same with the grated parm cheese.
place in oven on 400 for about a half hour and then check it to see if its done.
