Tex Mex Calzones

Ingredients
Crust1 c whole wheat flour1 1/2 c white flour1 cup warm water1/4 t salt1 t sugar1 1/2 t yeast1 t olive oilFilling1 pound ground turkey1/2 c chopped red pepper40 grams light shredded Tex Mex cheese1/2 c chopped onion2 cloves garlic1 1/2 t chili powder3/4 t ground cumin3/4 c salsa verde1 egg white beaten
Directions
Crust
1. Mix a little sugar into the warm water.
2. Sprinkle yeast on top.
3. Wait for 10 minutes or until it gets all foamy.
4. Pour into a large bowl.
5. Add flour, salt, olive oil.
6. Combine.
7. Knead for 6-8 minutes until you have a moderately stiff dough that is smooth and elastic (add a bit more flour if you need to).
8. Cover and let rest for 20-30 minutes.
9. Roll crust into pizza shaped crust, cut in quarters

Filling
Preheat oven to 425 degrees. Adjust oven rack to upper third of the oven.
Heat a large skillet over medium high heat. Add ground turkey and cook 5 minutes, stirring to crumble. Add onion and garlic; continue to cook for an additional 4-5 minutes or until onions are translucent.
Add spices and cook for 1 minute to bring out the flavors in the spices. Add chopped pepper; continue to cook 1 minute.
Remove mixture from heat and stir in salsa.
Unroll dough and divide into 4 equal portions. Working with one rectangle at a time place, 1/2 cup of turkey mixture on half of the dough then top with 2 tablespoons of cheese.
Using a pastry brush or fingers, brush the egg mixture on the border of the dough. Fold dough over turkey mixture and press with a fork to seal. If you prefer a crisp crust, brush some additional egg wash over the top of the calzone.
Bake 10-12 minutes or until golden brown.
