Red Lentil Soup

Ingredients
1 Tbsp. extra virgin olive oil1 medium yellow onion, minced4 cloves garlic, mincedHandful cilantro, chopped, plus extra for garnish1 tsp. ground coriander 1 tsp. ground cumin3 tsp. curry powder2 1/4 cups dried red lentils1 14.5-ounce can crushed tomatoes8 cups vegetable broth
Directions
Heat olive oil in the bottom of a large pot. Add onion and saute for 2 minutes. Add garlic, cilantro, and spices, and cook for a few more minutes. Add lentils, tomatoes, and broth and bring to a boil. Reduce to a simmer and cook for about 20 minutes. Enjoy!!
