Ingredients
1 cup chopped fresh tomato1/2 Hass avocado, chopped1 garlic clove, crushed1 Tbsp balsamic vinegar1 tsp olive oil1/2 cup cooked corn kernels1/4 cup minced red onion1/4 cup chopped fresh cilantrosalt and pepper, to taste
Directions
Combine all ingredients in small bowl and refrigerate for 30 minutes.

    I do something similar quite frequently, when I can get decent avocados.
    I've never added corn kernels, though. I can imagine a handful of these and a handful of peas would be tasty.
