Blueberry Muffins w/ Streusel Topping

Muffins:1 3/4 Cup flour1/3 Cup sugar2 tsp baking powder1/4 tsp salt3/4 Cup nonfat milk1 large egg1/4 Cup canola oil1/4 tsp dried lemon peel3/4 Cup fresh blueberriesStreusel Topping:3 Tbsp flour3 Tbsp brown sugar2 Tbsp butter
Preheat oven to 400 degrees.
Mix flour, sugar, baking powder & salt in medium bowl.
Mix milk, oil & egg in small bowl
Combine milk mixture in flour mixture until moistened.
Fold in lemon peel and blueberries.
Divide evenly in 12 muffin cups.
Mix streusel topping in small bowl until coarse crumbly mixture. Divide evenly among 12 muffins.
Bake muffins 18 - 20 minutes. Cool in muffin pan on wire rack for 5 minutes before removing from pan.
