Tofu and veges with red curry

Ingredients
Tofu1 onion3 cloves garlic1 bag organic broccoli1 bag cauliflower1 bag baby carrotts5 tbsp olive oil12 oz mushrooms1 bottle of Trader Jos Red Curry Sauce
Directions
Heat oil in cast iron pan or wok. Add onion and garlic and stir fry until translucent. Add broccoli, cauliflower and carrotts. Add half cup of water, stir and put top on for 3-4 minutes. Add curry sauce, mushrooms and tofu and stir. Simmer , stirring occassionally until done. Serve over brown rice. Makes 5 servings. Add leftover vegetables to pot if desired.

    I've tried this, and I can assure you, it is delicious! Actually, using any of the Trader Joe's sauces is delicious with tofu and vegetables. I've used the Masala simmering sauce, which is less fattening, and it is also fantastic. - 2/27/10
