Braised leeks & carrots

Ingredients
3 leeks, trimmed, green & white parts, sliced 3 large carrots, julienned2 T buttersalt & pepper
Directions
Makes about 6 cups.
Slice leeks into pieces about 1/2 inch.
Cut carrots into pieces about 2 inches long and 1/2 inch thick.
Melt butter in casserole over medium-high heat. Add leeks and carrots and stir to cook until vegetables begin to soften. Cover and turn heat to low. Cook 20 minutes or so, until tender, stirring occasionally. Salt & pepper to taste.
