Stuffed pasta shells with ricotta and spinach

Ingredients
1/2 onion, diced4 Tbsp minced garlic4 cups spinach, chopped2 Tbsp EVOO1 box Barilla jumbo shells1 lg container part skim ricottaPrego fresh mushroom sauce (6.5 cups)
Directions
1. Cook jumbo shells according to package directions. Drain and set aside.
2. Heat EVOO in large skillet.
3. Add onion and garlic to oil. Cook until almost translucent.
4. Add spinach and cook down.
5. Mix together in bowl with ricotta cheese, salt, pepper, basil, oregano, and thyme.
6. Stuff each pasta shell with a heaping tablespoon of cheese mixture.

Makes approx 40 shells. 1 serving = 5 shells.
