Oatmeal Raisin Muffins

Ingredients
1 cup oats1 cup 1% milk1 cup whole wheat flour1/2 cup Splenda brown sugar blend1/2 cup unsweetened applesauce1 whole egg1 egg white1 tsp BP1/2 tsp BS1/2 tsp salt1 tsp Cinnamon1/2 cup raisins
Directions
soak oats in milk for 1 -2 hours, Measure all dry ingredients together. Add egg and white, raisins, and applesauce to oats, Stir in dry ingredients, mixing only to blend. Spoon into lined muffin pans. I find the foil liners work great. Bake at 400 for 18-24 or until top springs back...cool on wire rack. Can be frozen.
