Strawberry pie

Ingredients
4 c. fresh strawberries1 c. sugar3 tbsp. cornstarch1/2 tsp. baking powderCooked pie crust
Directions
Clean and drain strawberries. Mash 2 cups of berries with sugar, cornstarch, and baking powder in a saucepan. Cook mixture about 8 minutes over low-medium heat, stirring constantly until mixture is thick and clear. Cool. Glaze is made.
Arrange 2 cups remaining strawberries in cooked pie crust. Pour cooled glaze over top of berries. Best if allowed to set in refrigerator for a few hours. Serve with whipped cream.

    This is quick and easy to make. I cut the amount of sugar in half, though, because I didn't want the natural sweetness of the strawberries to get lost to too much sugar. It was very good and was gone within a day! - 6/19/11
