Maria's Black Bean Salad

Ingredients
2 C cooked Black Beans1 C fresh corn kernels, roasted and cut off the cob1/2 red onion, chopped1 bell pepper, chopped (any color)1 C cherry tomatoes, chopped1 Avocado, chopped1/4 C cilantro, mincedSalt & Pepper, to tasteDressing:1 Garlic Clove, minced3 Tbl Fresh Squeezed Lime juice1/4 tsp chili powder1/4 C olive oilSalt & Pepper to tasteMakes 16 (1/2 Cup) Servings
Directions
If using canned black beans, rinse well. Roast corn until golden brown, let cool, and cut kernels from ear. (about 2 ears). Mix roasted corn, black beans, bell pepper, red onion, cherry tomatoes, avacado, and cilantro in large bowl. Salt and pepper to taste. Mix dressing in separate bowl by combining garlic, lime juice, chili powder. Slowly drizzle in olive oil, whisking to emulsify. Salt and Pepper to taste. Combine salad with dressing and serve.
