Amy's Cornbread

Ingredients
1.5 cup yellow stone ground cornmeal.5 cup whole wheat flour2 t Rumsford baking powder.5 t baking soda1 t salt.25 c canola oil divided1 large egg1.5 cup lowfat buttermilk
Directions
Makes 12 servings
Preheat oven to 400 degrees.
Put 2 T oil in cast iron skillet and preheat skillet with oven.
Mix dry ingrediants in a bowl,
Mix wet ingrediants in small bowl and add to dry.
Mix briefly.
Take out hot skillet and carefully pour in cornmeal batter.
Bake until golden.
Flip out on a plate and enjoy.
