Ingredients
5 qts fresh canned tomatoes or 5 large cans tomatoes1 sm can of tomato paste2 T olive oil5 cloves garlic, minced1 large onion, diced1 large green pepper, diced12 oz mushrooms, sliced1 pkg onion soup mix2 T oregano2 T parsely2 T basilsalt/pepper if desired
Directions
Put olive oil on large sauce pot...mince garlic, slice onions, green peppers and mushrooms, add to pot as you are done slicing. Once onions and peppers are starting to soften, add one pkt of onion soup mix and spices as well as salt and pepper if desired. Stir and cook for 5 minutes. Add tomatoes and tomato paste - stir - cover and cook on low for at least 1/2 an hour to heat things through - the longer it cooks down - the better/thicker it gets.
