Oven Baked Slow Cooker Chicken

1 whole chicken3 red potatos, quartered2 baking potatos, quartered1 c. baby carrots1 c. diced celery1 onion, chopped and quartered3 cloves garlic, minced.5 c. chicken broth1 tbsp olive oil1 tbsp paprikasalt & pepper to taste
Makes 6 servings with a 5lb chicken
1. Remove skin and innards from chicken, rinse under cold water and pat dry with paper towels
2. Rub both sides chicken with olive oil, cover with salt, pepper, and paprika
3. [optional] Place chicken in slow cooker with broth. Cook on high for 1-2 hours.
4. Remove chicken, place vegetables in bottom of slow cooker, set chicken on top.
5. Cook 6-8 hours on low, depending on size of chicken. Avoid over-cooking, as this will make the chicken dry out.
