Berry Stuffed French Toast

Ingredients
1/3 cup blackberries1/3 cup blueberries1/3 cup raspberries2/3 cup semisoft farmer's cheese or cottage cheese (1% or 2%)2 tsp. granular sugar substitute8 slices whole-grain bread2 large eggs1/4 cup skim milk1/4 tsp ground cinnamon1 tsp vanilla extract
Directions
In a medium bowl, combine berries, cheese and sugar substitute. Using a fork, mash together lightly. Spread mixture evenly on four slices, top with remaining slices to form 4 sandwiches. Lightly press edges to seal.

In a shallow dish beat eggs, milk, cinnamon, and vanilla. Dip both sides of sandwiches in egg mixture.

On a griddle, preheated to medium heat and lightly sprayed with cooking spray, cook French toast until golden brown, about 2 minutes per side. Serve warm.
