Slimmed Down Applebees Lime & Cilantro Chicken

Ingredients
Marinade: .5 Cup Water.25 Cup Trop 50 Orange Juice (any orange juice will do, but this is lowest cal. per serving)2 Limes, JuicedA quarter of a small onion, diced.25 Tbsp of Cilantro, DriedOther Ingredients:1 Chk breast, no skin, no bones.5 tbsp Smart Balance Light Buttery Spread1 cup of Brown Long Grain Rice 2 cups water.25 cup of Black Bean and Corn Salsa.5 oz Tortilla Chips
Directions
Mix marinade a few hours before Meal time. I usually let mine marinade 3 hrs.

After chicken has marinaded let half a tbsp of Smart Balance melt in a skillet with deep sides and a covering top that you will also cook rice in. and let it melt at a med. heat.

Cook the chk on both sides for 10 minutes flipping four times. Save the Marinade, you will need it later.

Add a cup of Brown Rice to the skillet your chicken is in along with a 1 and 3/4 water.
Let the rice cook for about half the needed cooking time which should be about 20 min.
Flip the Chicken Breast and add the Marinade to the skillet a long with 1/4 a cup of Salsa.

Let rice cook until soft.

Serve rice with .25 oz of tortilla chips on top, then chicken breast placed on top of that. Adds that great crunch.

Can be served with cheese, but for calorie difference none is used in the Nutritional Info.

Double Marinade Recipe per chicken breast.
