Ingredients
1 tbsp olive oil1 cup chopped onion (1/2 large)1.5 cup chopped bell pepper (2 any color)1 cup diced celery (2 large stalks)3 tsp minced garlic (3 cloves)1 lb lean ground beef1 tbsp chili powder1 tbsp dried oregano2 tsp cumin seed, slightly crushed2 tsp salt1 can each: pinto beans and kidney beans (15 oz)1 can diced tomatoes (14.5 oz)1 can tomato sauce (15 oz)1 tbsp ketchup
Directions
heat oil in dutch oven or large pot over med. heat. Add onion, pepper, garlic, and celery. Cook, stirring, until veggies bein to soften (about 5 minutes). Add ground beef and brown, stirring. When beef is almost done, add spices and cook about 5 more minutes, stirring occasionally. Add beans and tomatoes with their juices, tomato sauce, and ketchup. Simmer until thick and fragrant, about 25 minutes.
Makes just under 10 cups.

    Spectacular flavor! I used celery salt in place of celery and cumin powder instead of cumin seeds, half a can of petit diced tomatoes instead of a whole can. It was dee-lish! I will make this everytime I want chili from now on! thanks so much for the recipe! - 6/14/11
